EPISODE 332: The FDA Responds to Our Concerns
The FDA has responded to our concerns regarding allowing manufacturers to make certain ingredient substitutions without changing the ingredients list. This is due to food supply issues during the pandemic.
The FDA stated in a letter to Gluten Free Watchdog that their COVID-19 food labeling flexibilities:
“… are not to be used when they may pose a health or safety issue. This would include the introduction of an ingredient containing gluten. Substitutions, in any amount, are not appropriate without a corresponding label change when the substituted ingredient is one that may cause a safety concern.”
To help manufacturers avoid the inadvertent substitution of a gluten-containing ingredient for a gluten-free ingredient, Gluten Free Watchdog, along with five other groups put together some information. Please share!

Using the gluten free diet as a punchline in media is unfortunately nothing new. Now Walmart has joined the ranks of companies making the decision to use the diet as a joke. While I appreciate that they carry gluten free food but their ‘Holidays: Hosting’ spot is lazy + uncreative. Why make fun of people who can’t eat gluten for health reasons?
The son’s internal eye roll that his Mom is “off gluten” makes me cringe. It makes people feel like a “pain,” something many of us struggle with often.

EPISODE 130: 1st Degree Relatives – Get Tested!
♦️Do you have Celiac Disease?
♦️Are you the 1st degree relative (parent, sibling, child, aunt/uncle or cousin) of someone who does?
BLUF (Bottom Line Up Front): This study calls for screening of ALL first-degree relatives of patients — not just those who show symptoms. In this study, 44% of screened first-degree relatives had celiac disease. Of those patients, 94% had symptoms that were NOT classic or had NO symptoms at all.
Recommendations: Gastroenterologists and General Practitioners should ask about any family history of celiac disease among their patients’ parents, siblings and children. And if they’re present during the clinic visit, they should offer screening. Full Study Here

EPISODE 123: How to Explain Celiac Disease Easily
Explaining Celiac Disease to a child – or an adult – can be challenging. Describing how one crumb of gluten can activate the auto immune response, causing villi in the small internist to blunt and malabsorption of nutrients can result can confuse and many.
Even as a Health Educator, I’ve found it challenging to explain the autoimmune disease component of Celiac, especially to kids. Another point that’s hard to convey: even one crumb of gluten-containing food activates the response. Lastly, beyond the symptoms you may experience, what is happening internally.

EPISODE 94: Michigan State University’s Allergen Free Dining Hall
Michigan State University will open Thrive, its first allergen-free dining hall, on July 8. None of the food at the location will contain the eight most common allergens: milk, eggs, soy, wheat, peanuts, tree nuts, fish and shellfish. The facility will also be gluten free.
Michigan State’s other dining halls are also certified by AllerTrain. I’ve had the pleasure of dining in one of them – Brody Hall – and was impressed by their gluten free offerings and cross contact protocol. EPISODE 79: Summer Camps for Gluten Free Kids
From a study in the Journal Pediatrics: kids who attend a dedicated gluten free summer camp enjoy important benefits. Namely, they leave the experience with a more positive outlook and self-perception, as well as an improved sense of well-being and emotional outlook.
“All seemed to benefit from camp, no longer feeling different from other kids or feeling frustrated with a restricted diet,” reported researchers in the journal Pediatrics. While all of the children enjoyed the camp experience, those who had been on a gluten-free diet for less than four years benefited the most. These children left camp no longer feeling embarrassed or isolated from other kids because of their restricted diet. Campers also learned new coping mechanisms from others in camp who had been living gluten free for a longer time.

EPISODE 77: Testing Gluten Free Food from Chain Restaurants
Gluten Free Watchdog, LLC (aka Tricia Thompson) is testing restaurant items! First up, PF Chang’s Lettuce Wraps.
✅ She’s starting by testing food from national chain restaurants with gluten-free menus or gluten free items identified on menus AND who state they can accommodate folks with celiac disease.
✅ The Plan: test the same menu item from 3 to 5 locations nationwide. This testing is designed to give an idea of the nature and extent of issues with cross contact at non-dedicated restaurants.
✳️ She understands that just because one location of a chain restaurant can successfully make a gluten-free item does not mean all locations can accomplish this. This testing is NOT meant to be an across the board statement on the safety (or lack thereof) of all branches of a restaurant.

EPISODE 74: Williamsburg Appeal: Ruling moves case to jury trial
A gluten free Maryland boy’s case against a Williamsburg, VA restaurant will now go to the district court in Virginia for a jury trial. The boy, with a gluten intolerance, brought a chicken sandwich into a venue to eat with his classmates on a class trip. The venue offered a gluten free meal, prepared onsite, but the boy had experience getting sick due to eating and chose to eat the food he brought. They asked him to leave, separating him from his classmates and the experience of the venue. His family brought a lawsuit against Colonial Williamsburg.

An AllerTrain 2019 winner
The University of Buffalo Campus Dining and Shops (CDS) has been recognized as having the “Best Food Allergy Training for Universities” in 2019 by AllerTrain by MenuTrinfo, a food allergy and gluten-free training and awareness for the food service industry.
Lori Bendersky, CDS’ registered dietitian, became an AllerTrain Master Trainer in March 2018. She then trained the entire UB culinary and management team through the AllerTrainU course, a food-allergy and gluten-free certification program that covers essential information on how to safely prepare food for guests with food allergies, intolerances, sensitivities and celiac disease in a university food service setting.

EPISODE 55: ABC Show American Housewife – cut it out!
The TV show American Housewife, airing on ABC , is using gluten free food as punchline. They’ve done it now in 2 consecutive episodes! This is uncreative, lazy and not funny.
In one, the main character says: “I’m adding her to the banned list along with gluten free Girl Scout Cookies. I mean, this is America, isn’t it?” (S 3 Ep 19). The other says: “I ordered a gluten free funnel cake today and part of me died.” (S 3 Ep 20).
These “jokes” hurt those who rely on this food as medicine in many ways. Besides disparaging the treatment for medical conditions, it chips away at the collective thinking that gluten free food needs to be taken seriously for those with medical conditions.

Helping out a Gluten Free Food Pantry is a great activity in honor of Celiac Awareness Month. There are a handful across the country that could use our help! Gluten Free and allergy-friendly foods can cost up to 450% more then their counterpart products. This means that for some individuals and families, a medical diagnosis requiring a gluten free diet can lead to a severe financial strain. Gluten free food is rarely available at food pantries, leaving few options for getting affordable, safe hunger relief. Low – income individuals are often forced to choose between health and hunger.
Thankfully, a few gluten free, allergy-friendly food banks have opened across the country to address this need.Please consider helping one of the dedicated food pantries that serve those living with food scarcity and a dietary restrictions.

EPISODE 49: New Feeding Guidelines for Babies at Risk for Celiac
The University of Chicago Celiac Center has issued new feeding guidelines for infants at-risk for developing Celiac. Those at-risk include babies with a parent or first degree relative with Celiac and/or those with either of the 2 Celiac genes.
The new guidelines recommend a Mediterranean diet with limited consumption of gluten – less then an ounce of pasta or slice of bread/day. This guideline recommendations begin at 4-6 months and should continue until the baby is 2 years old.

EPISODE 35: Michigan State University adds Allergen Free Dining Hall
Go Green! Michigan State University is joining a small, but growing, group of universities offering a dedicated, allergen free dining hall. Opening in fall 2019, “Thrive” will be free of 9 major allergens – including sesame. This dining hall will be certified by Kitchens with Confidence, a third-party accreditor that will regularly examine protocols and policies to verify this location as being free of the allergens listed. EPISODE 34: “Dear Celiac,” by Kristen Adam
Eleven year old Kristen Adam is on a mission to make sure kids with Celiac disease didn’t feel lonely like she did in the beginning when I was first diagnosed. To help with that, she wrote a book called “Dear Celiac.” Filled with relatable emotions, the book is charmingly illustrated by Kristen’s 3rd grade teacher.

EPISODE 33: “Everyone’s Got Something,” by Hallie and Rayna Katzman
“Everyone’s Got Something, My First Year with Celiac Disease” is a newly released book about being a teen with Celiac, written by teens with Celiac! Written by Halllie and Rayna Katzman, the book is praised as being an honest, relatable and upbeat take on celiac. Written in journal form, it’s perfect for any child or teen dealing with Celiac.
The authors – Hallie and Rayna – are seniors in high school and were diagnosed with Celiac at age 13. They’re active in the gluten free community: they lead a food sensitivities and food allergy club in school and are Celiac Disease Foundation Ambassadors.

EPISODE 30: Gluten Free Food Pantries
Gluten Free and allergy-friendly foods can cost up to 450% more then their counterpart products. This means that for some individuals and families, a medical diagnosis requiring a gluten free diet can lead to a severe financial strain. Gluten free food is rarely available at food pantries, leaving few options for getting affordable, safe hunger relief. Low – income individuals are often forced to choose between health and hunger.
Thankfully, a few gluten free, allergy-friendly food banks have opened across the country to address this need.Please consider helping one of the dedicated food pantries that serve those living with food scarcity and a dietary restrictions.

Fallacy: Wheat-based sourdough bread is not safe for someone with Celiac or Gluten Sensitivity to eat. There is nothing about the fermenting process that “neutralizes” the gluten.

EPISODE 21: Gluten Free Beer vs Gluten Reduced Beer
Happy St. Patrick’s Day
Summary
In honor of St. Patrick’s Day, let’s talk beer. There can be a lot of confusion around beer in the gluten free community around gluten free vs. gluten reduced products. What’s the difference? Gluten free beer is made with grains that naturally don’t contain gluten like sorghum or brown rice. Gluten removed beer is made with wheat, barely or rye and undergoes a process to removed gluten using enzymes.
According to a 2017 study by the Gluten Intolerance Group (GIG) at the University of Chicago’s Celiac Center, gluten removed beer may not be safe for those with celiac. In the study, gluten removed beer caused antibodies to react in a percentage of the subjects with celiac. Cynthia Kupper, CEO of GIG, added the medical and scientific community has not accepted gluten removed beer is safe because available gluten testing methods aren’t accurate with fermented and hydrolyzed products.

EPISODE 19: Oats in Unexpected Products
With this trend comes extra detective work

Oats are an ingredient that can be problematic for those living with celiac and gluten sensitivity due to cross contact and sorting methods. It’s important that the gluten free community be aware they’re an increasingly popular ingredient in both food and beverages. At Natural Products Expo West 2019, they were listed as a trend, along with healthy fats, plant-based and lower sugar products. Listen to Episode 18 for more on these trends.
Oats are showing up in obvious products but not so obvious places as well. Oat Milk is gaining popularity for it’s milky mouthfeel and gaining particular momentum in the dairy-free product market. Less obvious products containing oats sources are non-dairy frozen products, chocolate bars, waffles and coffee beverages.
This uptick in use of oats means the gluten free community needs to pay even closer attention to labels. Sources of oats – and whether they’re purity protocol, can require an extra level of detective work. Gluten Free Watchdog is keeping a running list of manufactures and suppliers using oats produced under a gluten-free purity protocol. Listen to Episode 7 for more info about gluten free oats.

EPISODE 18: New Trends and GF Finds in Natural Products
Expo West 2019
Summary
Natural Products Expo West 2019 wrapped up in Anaheim, CA. last week. This annual trade show features natural, organize and speciality and functional products from over 3500 companies. Baltimore will play host to Expo East in 2019.
Trends spotted in products were lower sugar, higher (healthy) fat, plant based products and use of oats. On my list of products to find and try are Brazi Bites new line of Empanadas, convenience items like Ramen in a cup from Pamela’s and Lotus Foods and Bonafide Provisions‘ heat and sip cups. Finally, one of my favorite companies, Simple Mills, debuted their Brownie Mix.

EPISODE 17: We have to represent the GF Community, not Gwyneth
Summary
There was an interview with Gwyneth Paltrow published yesterday in the New York Times. In it, she deemed herself responsible for the gluten free market being as large as it is now. She tied it to one of her products, a gluten free cookbook, released in 2015.
Besides the fallacy of her claim, why spend time even talking about this crazy statement? Because it’s hurts those who are gluten free for medical reasons. Here why in the briefing.

EPISODE 16: Dental Issues and Celiac
Another study to support the connection
Summary
Studies have connected dental enamel defects and Celiac Disease. Now, another study adds to that body of data: a study out of the University of Salerno found that recurrent mouth sores, dental enamel disorders and non specific tooth were higher in the celiac patients then non-celiac patients. Dentists are in a good position to flag those with Celiac.

In the first part of my recap of the Celiac Project Screening Q and A with Samra Blanchard, MD in February, I wanted to share something that really surprised me. According to Dr. Blanchard, if you have Celiac Disease and react to getting glutened quickly, you have Gluten Sensitivity. By quickly, she meant within a few hours of gluten consumption. For those with only Celiac, it takes longer for the autoimmune response to be noticed. She mentioned that patients who report quick responses are noted in their medical chart to have both.

Modern Bread and Bagel just opened on the Upper West side of Manhattan this past week. In addition to bagels and house-made spreads and cheeses, this gluten free and kosher bakery serves breads, cinnamon buns, babka, pop tarts, donuts and more! Check out their website for their other delicious brunch items which is served from 7 am – 4 pm. In the next few weeks, a Mediterranean restaurant named Arba will open in the evenings in the same spot. It’s also gluten free, dairy free and kosher.

The fry lie that won’t die

McDonald’s French Fries are NOT gluten free in the US. This is a fallacy that seems to rear it’s ugly head frequently in Facebook groups. One of the fries’ 19 (!) ingredients is Natural Beef Flavor, made from wheat. Not only that, McDonald’s announced the fries are fried in the same fryer as their new donut sticks. EPISODE 7: Oat Flour in Gluten Free Products
How to know if they’re safe
Summary
Oat flour seems to be showing up in more gluten free products then ever. But even if a package is labeled gluten free, we have to dig further to determine the source of the oats used in the flour.
Jules Shepard (aka GF Jules) has the perfect example. Kellogg’s has come out with an Eggo Waffle labeled Gluten Free on the box. However, the oats in the ingredient label don’t mention gluten free oats. Even if they did, we have to investigate further to determine if the oats are from a Purity Protocol to truly be deemed safe.
